Resumen
Objetivo
Evaluar y caracterizar el contenido de fenoles totales, flavonoides y la actividad antioxidante
presentes en el extracto etanólico de hojas de Solanum lycopersicum
Metodología
Estudio de tipo básico, con nivel descriptivo y diseño experimental. Se obtiene y caracteriza el
extracto etanólico de hojas de Solanum lycopersicum y desde aquí sus fracciones. Se realiza un
tamizaje fotoquímico mediante reacciones de coloración y/o precipitación, Se evalúa el contenido
de fenoles totales y flavonoides totales expresándolos como equivalentes a soluciones de ácido
gálico y quercetina, respectivamente. Y de determina la actividad antioxidante usando como
radical libre el DPPH
Resultados
En la fracción A y D se determinó: un contenido de fenoles totales equivalentes a disoluciones de
161.94 y 90.66 mg de ácido gálico/100 mL respectivamente, un contenido de flavonoides
equivalentes a disoluciones de quercetina de 88.25 y 96.49 µg (EQ)/100mL y una actividad
antioxidante para atrapar DPPH de 51.38 % y 69.54 % que son equivalentes a disoluciones 10.48
y 6.76 mg de ácido gálico/100mL.
Conclusión
Se concluye que las hojas secas de tomate en cosecha presentan un notable porcentaje de
capacidad antioxidante, sugiriendo la necesidad de realizar estudios adicionales sobre las
propiedades de esta planta.
